The Best Chocolate Salami
Rich dark chocolate, crunchy biscuits & nuts, and little pops of cranberry. Keep it in the fridge and slice when you want something sweet, or whip up as an easy dessert that feels a bit special without the effort.
FESTIVE CHOCOLATE SALAMI
Ingredients
250g dark chocolate
100ml cream (or coconut cream)
50g butter
250g plain biscuits
50g shelled pistachios, roughly chopped
50g walnuts, roughly chopped
50g dried cranberries
2 Tbsp cocoa powder
DIRECTIONS
Add the dark chocolate, cream and butter to a heatproof bowl set over a saucepan of gently simmering water (making sure the bowl doesn’t touch the water). Stir occasionally until melted, smooth and glossy, then remove from the heat.
Lightly crush the biscuits and add them to the bowl along with the walnuts. pistachios and cranberries. Stir until everything is evenly coated.
Spoon the mixture onto a large sheet of gladwrap. Shape into a log, roll tightly, and twist the ends to seal. Refrigerate overnight until completely firm.
Once set, roll the chocolate salami in cocoa to coat. Slice to serve and keep remaining log chilled.
