High Protein Seeded Scones

A favourite from our Go Diet Free program - and one of those playing around in the kitchen recipes that turned into something we now make on repeat.

These soft, fluffy high-protein scones are made with simple wholefood ingredients - no kneading required, no yeast. Best enjoyed warm from the oven, sliced and topped with butter or filled your favourite way.

Add grated cheddar or jalapeños if you want to level them up - once you try them, they’ll become a staple.


HIGH PROTEIN SEEDED SCONES

Makes 6

Ingredients

  • 4 Free Range Eggs (medium)

  • 1/3 cup Cottage Cheese

  • 1 tsp Baking Soda

  • 1 3/4 cups Oats (wholegrain, not rolled)

  • 3 tbsps Chia Seeds

  • 1/4 cup Whole Flax Seeds

  • 1/4 cup Sunflower Seeds

  • 1/4 cup Pumpkin Seeds

  • 1/2 tsp Sea Salt (to taste)

DIRECTIONS

Preheat the oven to 200°C and line a baking tray with baking paper.

In a medium bowl, add the eggs and cottage cheese and stir until well combined.

Mix in all the dry ingredients, stirring until a thick batter forms. Allow the mixture to rest for 10 minutes so it can swell and thicken.

Once rested, scoop the mixture into 6 portions and place them onto the prepared tray. Gently shape into rounds - the mixture should hold together easily.

Bake in the preheated oven for about 18 minutes, or until golden on top.

Remove from the oven and allow to rest for 5 minutes before slicing.

Enjoy whole, or slice in half and serve with butter or your favourite fillings.

Optional add-ins we love: Grated cheddar cheese and/or finely sliced jalapeños for extra flavour.
