Healing Chicken Broth


This is our go-to broth recipe - intentionally designed to support gut healing.

This broth forms a foundational part of our protocols for patients with intestinal permeability (“leaky gut”), eczema, digestive disorders, autoimmune conditions, inflammation, injury and low immunity.

We use a whole chicken to keep the cooking time down (minimising histamine build-up) while delivering a delicious and nutrient dense broth.

The connective tissue, skin, and bones provide a rich source of zinc, collagen, gelatin, and key amino acids like glycine, proline, and glutamine - nutrients that are all essential for restoring the gut lining, calming inflammation, supporting detoxification, and improving skin and joint health.

Sip it as a warm drink between meals, or use it as a healing base for soups, stews, and slow-cooked meals.

Healing Chicken Broth

Ingredients

1 whole organic/free-range chicken
8 whole black peppercorns
2 sprigs fresh parsley
2 Tbsp fresh dill
2 tsp sea salt (adjust to taste)
1 tsp turmeric
1 carrot, sliced
1 celery stalk, sliced
1 leek, sliced

Directions

Add all of the ingredients (except the herbs) to a large pot and cover with water. Bring to a gentle boil.

Reduce the heat to low and let it simmer, partially covered, for 90 minutes.

Lift out the chicken carefully and set it aside to cool. (You can shred the meat and set aside to use in meals)

Simmer for another 30 minutes, uncovered.

Stir in the parsley and dill, cover, and turn off the heat. Leave for 10 minutes.

Strain the broth through a sieve, taste and adjust seasoning if needed. Store in the fridge (up to 5 days) or freezer (up to 6 months).
