5 Ingredient Healthy Afghan Biscuits


A much-loved Simple. Subscriptiorecipe and a healthy take on my absolute favourite bikkies.

5 wholefood ingredients, flourless and refined sugar free. Bonus, they only take 5 minutes to make!

Healthy Afghan Biscuits

Ingredients

1 Egg

1 Cup Almond Butter (or peanut butter)

1/2 Cup Coconut Sugar

1/4 Cup Cocoa Powder

1 Tbsp Coconut Cream

1/2 Cup Cornflakes (we use organic, no added sugar)

Pinch of Sea Salt

For Icing

30 Grams Dark Chocolate (70%, melted)

1 Tbsp Coconut Cream

12 Walnuts

Directions

Preheat the oven to 170°C. Line a baking sheet with parchment paper.

In a mixing bowl, combine all of the ingredients - except the cornflakes - and whisk until well combined.

Add the cornflakes and mix with a spoon until incorporated well.

Gently roll a tablespoonful of batter at a time into balls and transfer to the baking sheet. The mixture will be slightly sticky so use wet hands. Flatten each ball using your fingers or a fork.

Bake for 10 minutes. Remove from the oven and let them cool completely to allow the cookies to firm up.

Combine melted dark chocolate and 1 tablespoon of coconut cream to make icing. Ice each biscuit, and top with a walnut piece if desired. Enjoy!
