Ingredients
1 can tinned fruit salad in juice (we used Ceres Organics tropical fruit salad)
3 tsp unflavored gelatin powder
Hot water and extra fruit juice (or water) to make up the total liquid volume needed (check gelatin packet instructions, typically around 2 cups total)
Directions
1. Drain the fruit: Drain the fruit, reserving the juice.
2. Bloom the gelatin: In a small saucepan, sprinkle the gelatin powder over ½ cup of cold water or reserved juice. Let it sit for a few minutes to “bloom.”
3. Heat the liquid: Add the remaining reserved juice and enough additional water/juice to reach the total required liquid volume. Heat over medium heat, stirring constantly, until the mixture is steaming and the gelatin has fully dissolved. Do not boil, as this can affect the texture.
4. Combine and chill: Allow the mixture to cool slightly. Divide the drained fruit among serving cups, pour the gelatin mixture over the top, and refrigerate for 3–4 hours or until fully set.
