Our One-Cup Salad

This delicious salad is a weekly staple in our household and a favourite side dish from our 28-Day Feel Good Formula.

It’s the perfect spring salad to serve beside your choice of protein, and it’s even better the next day so great for lunch meal prep. Enjoy!

Our One-CUP Salad

Ingredients

Ingredients

1/2 cup Brown Rice (uncooked, or quinoa/bulgur/couscous)
2 tbsps Extra Virgin Olive Oil (divided)
2 tbsps Lemon Juice (divided)
Sea Salt & Black Pepper (to taste)
2 cups Baby Spinach
1 cup Chickpeas (cooked/canned - drained)
1 cup Cucumber (chopped)
1 cup Cherry Tomatoes (halved)
1 cup Pitted Kalamata Olives
1 cup Goats Feta (diced)
1 cup Parsley & Mint (fresh, finely chopped)

Directions

Cook the rice according to package directions and set aside to let cool slightly.

Add the cooked rice to a large bowl. Add half of the oil and half of the lemon juice and season generously with salt and pepper. Toss to coat.

Add the chickpeas, chopped cucumbers, tomatoes, olives, spinach, feta, parsley and mint to the rice. Toss gently to combine.

Dress salad with the remaining oil and lemon juice. Taste, and season again with salt if desired.
